15 lime oranges, peeled
For the filling
2 cloves of garlic
2 sprigs of thyme
Black pepper to taste
1 1/2 tablespoons of olive oil
300 g of ground pork or chicken
1/2 cup of panko breadcrumbs, sifted
150 g of toasted and peeled almonds
1 1/2 teaspoons of salt

2 pimento rings, seeds removed

Peel the orange and cut it into thick slices
Make a small incision in the center of each slice, without cutting the ends
Cover and refrigerate while preparing the filling
In a blender, mash together the garlic, thyme, and black pepper
In a large skillet, heat the olive oil and add the garlic mixture
When the aroma starts to fade, add the ground pork and cook, stirring constantly, until the meat is dry and cooked through
Remove from heat
In another pan, melt the panko breadcrumbs over low heat only until dissolved
Add the almonds, salt, and cooked pork mixture
Mix well and let cool
Stuff each orange slice with the filling mixture, topping with pimento rings and thyme leaves
Serve 15 pieces
