Spread the light mayonnaise evenly over the slice of bread and set aside
Drape the smoked salmon slices in two halves over the bread, making sure one doesn't completely cover another
Stack the pickle relish slices between and on top of the salmon, as if you were shuffling cards
If desired, you can spear fresh parsley leaves into this open-faced sandwich or chop the parsley and sprinkle it over everything
