8 fresh salmon fillets (2 kg)
Salt to taste
For the sauce
1 medium cucumber, sliced or cut into rings (2 cups)
1 green pepper, cut into thin strips (1 cup)
1/4 cup red wine vinegar
1/4 cup lime juice
1/4 cup olive oil
1/2 teaspoon salt
1/2 teaspoon English mustard
1/2 teaspoon black pepper
8 fresh salmon fillets (2 kg)

Preheat the oven to 400°F (hot)
Season the salmon fillets with salt and drizzle a little olive oil on each one
Place them in a baking dish and bake for 20 minutes or until cooked through (don't overcook, so the fish doesn't become dry)
Remove from the oven and let it cool
Prepare the sauce: mix the cucumber and green pepper
In a small bowl, mix the remaining sauce ingredients and place over the cucumber and green pepper
Refrigerate
Serve with the salmon fillets
Cut into 8 portions
