3 cups of collard green, thinly sliced

3 sausage links, cut into rounds

1 Soak the collard green in hot water with salt for three hours
Squeeze out excess water and reserve
2 Heat the olive oil in a pan and sauté the onion and garlic until tender
3 Add the celery stalk, sausage links, and collard green
Simmer for another three minutes
4 Add the vinegar and let it simmer until all liquid is absorbed
Serve hot or cold.
