1/2 small finely chopped onion

1 finger-length bell pepper, seeded and finely chopped
2 large tomatoes, peeled and chopped
to taste salt

In a frying pan, sauté the onion and garlic in olive oil
Add the bell pepper and tomatoes and cook slowly for 15 minutes
Check the seasoning and add salt to taste
Finally add the coriander and mix
Serve with 1/2 cup.
