2 cups all-purpose flour

4 tablespoons melted butter or margarine
1/3 cup plain yogurt

1 small onion finely chopped
1 minced garlic clove
1/2 teaspoon grated ginger
To taste black pepper
1 teaspoon ground cinnamon
1/2 teaspoon ground coriander
250g ground beef or lamb
1 teaspoon salt
1 tablespoon freshly squeezed lime juice
1 tablespoon chopped fresh parsley
Oil for frying

Oil for frying
To make the dough: sift together flour and salt
Add melted butter, yogurt, and enough water (2-3 tablespoons) to obtain a firm dough
Knead until smooth and elastic
Roll out thinly on a floured surface
Cut into circles of about 8cm
Place 1 tablespoon of filling in the center of each circle, leaving the edges free
Brush edges with a little water
Fold in half and close well
Fry samosas in hot oil, some at a time, until golden brown
Drain and serve hot with cilantro chutney
To make the filling: heat oil and sauté onion until softened
Add garlic, ginger, cumin, coriander, cinnamon, salt, and black pepper
Cook for 2-3 minutes
Add ground beef or lamb and mix well
Season with salt
Let excess moisture evaporate
Stir in lime juice and parsley
Make about 30 samosas.
