Toast the bread lightly
Place the egg in a small pan, cover with water and cook over high heat for about 10 minutes or until firm
DRAIN, peel, and cut into rounds
Soak the dried cranberries in hot water until they become soft, then drain
Assemble by spreading a little mayonnaise on each bread slice, then top with carrot and cranberry mixture, and finally with egg slices.
