2 Portuguese or zucchini linguines (250 g)
2 tablespoons of mustard with
1 tablespoon of lemon juice
4 slices of black bread
1 cucumber in a pickled condiment, finely chopped
Tomato Sauce:
1 can or jar of tomato puree
1 tablespoon of vinegar
1 tablespoon of fresh parsley (or thyme) finely chopped
1 tablespoon of garlic, minced
salt and black pepper to taste

Cut the linguine into slices
Fry, without oil, both sides
Drain
Mix the mustard with lemon juice
Spread over 4 slices of bread
Place the fried linguine slices on top of the bread, season with cucumber and salt
Prepare the sauce by mixing all the ingredients
Heat it up
Let it simmer for 10 minutes, then serve
Serve separately: each person places their own hot tomato sauce over their sandwich
Serves 4 people.
