In a shallow dish, microwave 1/2 cup of butter and the onion at high power for 5 minutes or until the onion is tender
Add the rice, half the salt, and water
Cover and microwave on high for 14 minutes or until the rice is cooked. Reserve
In a medium dish, season the cod with the remaining salt and lemon juice
Add the remaining butter, cover and microwave at high power for 6 minutes or until the fish flakes apart when pierced with a fork
Place the cooked rice in a serving dish, topped with the flaked fish
Drizzle with half cup of cooking liquid, dust with toasted almonds or cashews, and serve
