1 cup shredded provolone cheese
1/3 cup finely chopped green pepper
1/4 cup grated Parmesan cheese
8 slices of bread form without crust
2 eggs (separated whites and yolks)
Salt and black pepper to taste

Preheat the oven to high heat
In a bowl, mix well the yolks, green pepper, and cheeses
Season with black pepper
Beat the whites until frothy with salt at the right consistency
Cover the toast with the yolk mixture and top with the beaten whites
Place in a baking dish
Bake for 12 minutes or until golden brown
Serve immediately
