Salted Bread Crumbs:
1/3 cup butter or margarine
2/3 cup all-purpose flour
1 3/4 cups milk
6 eggs
6 egg whites
1 pinch of salt
For the filling:
1 medium onion, finely chopped
2 tablespoons butter or margarine
4 tablespoons cornstarch
2 cups milk
salt to taste
1 can of flaked tuna
1/2 cup mayonnaise
1/4 cup chopped red bell pepper
2 tablespoons pimiento
1 tablespoon freshly squeezed lemon juice

Prepare the bread crumbs: line a baking dish with parchment paper measuring 42.5 x 30 cm
Butter and sprinkle with flour
In a saucepan, melt the butter or margarine and add half of the flour
Add the milk all at once
Cook while stirring until it thickens and boils
Remove from heat
Whisk in the eggs one at a time, beating well. Reserve
Beat egg whites in a large bowl until stiff
Add some of these beaten egg whites to the egg mixture and mix carefully
Add the remaining flour, salt, and whipped egg whites in an alternating fashion and mix carefully
Spread the mixture evenly in the prepared baking dish
Bake in a moderate preheated oven (170°C) for 25-30 minutes or until golden brown
Meanwhile, prepare the filling: fry the onion in butter or margarine until golden
Add the milk mixed with cornstarch and cook while stirring until it thickens
Remove from heat and mix well with remaining ingredients
Unmold the bread mixture onto a lightly floured surface
Spread the filling evenly over the warm bread mixture
Cut into 4 equal pieces lengthwise
Roll up one piece from the narrow end to form a roll
Place in the center of a plate and wrap the other three pieces around it, forming a large coil
(The dough is very delicate and may break if not handled carefully
If this happens, simply reattach the broken ends with your fingers.) Serve as desired with mayonnaise, pepper strips, etc.
