Use this bread crumb for the recipe, soft and fresh in the morning
Remove the crust and let it soak in milk until slightly softened
Drain and carefully remove excess milk (if the bread is too fresh, don't use milk or it might fall apart)
Cut square slices of mozzarella and arrange one between two pieces of bread
Dip in beaten egg, then coat with scone flour, let it dry a bit and fry in hot vegetable oil.
