8 slices of white or whole wheat bread
4 tablespoons (of a knife) of unsalted butter or margarine at room temperature
250g of mozzarella cheese, cut into 8 slices
2 large tomatoes, firm, cut into 12 slices
black pepper to taste
12 leaves of fresh parsley

4 tablespoons (of a knife) of unsalted butter or margarine at room temperature

Spread the butter on one side of the bread slices
Cover 4 slices with a piece of cheese and 3 tomato slices, slightly overlapping, each
Season with black pepper
Add 3 sprigs of parsley
Cover with another slice of cheese and finally end with a second slice of bread
Heat a large skillet and place two sandwiches at a time
Fry for 3 minutes on each side, pressing gently with a spatula
Serve 4 times.
