2 to 3 ripe bananas
2 tablespoons of lemon juice
2 tablespoons of rum

10 slices of white bread, or French bread
10 small slices of flat cheese, such as prato or mozzarella

Peel the bananas and mash them well with lemon juice
Add rum, salt, and black pepper
Mix well
Spread butter on each slice of bread
Place a thick layer of banana cream over each slice of bread
Top with a slice of cheese
Sprinkle with parsley and bake in a preheated oven (350°F) at moderate heat until the cheese melts (about 15 minutes)
Make 10 sandwiches.
