In a large pot, combine the chopped onion, minced garlic, olive oil, and diced tomatoes
Bring to a boil in high heat for 4 minutes
Add the peas, ground coriander, and 4 cups of water
Simmer for 10 minutes at the same heat, stirring occasionally to break down the peas
Season with salt and black pepper to taste, and serve with grated Parmesan cheese.
