8 slices of 3 to 4-day-old bread (about 1 inch thick)

Place the milk in a shallow dish and, with the help of a fork, soak the bread in the milk until it is moist but not soggy
Fold each slice of bread in half over a slice of ham
Assemble all the sandwiches between two plates and top with a lid
Let them rest like this for 1/2 hour
Dip the sandwiches in the beaten eggs mixed with salt and pepper, then fry in hot oil until they're golden brown
Serve warm
