Tripe, kidney and pork crackling from 1 pig
1 lime cut in half
Garlic mashed with salt
Ground coriander
Chopped onion
Chopped parsley
Lavender leaf
Pepper
Cinnamon
One pinch of crushed cloves
Fresh pig's blood
Malagueta pepper
Tripe, kidney and pork crackling from 1 pig
1 lime cut in half

Wash the tripe and meadows thoroughly
Rub the surfaces with half a lime
Simmer in seasoned water with salt until tender
Take about 2 hours
Remove from the water and chop finely
Mix all the seasonings with the meadows and 1/4 cup of blood
Cook over low heat, adding small amounts of water as needed
Remove from the heat and flavor with crushed Malagueta pepper
