4 medium red peppers
8 cups (chopped) of hot water
6 tablespoons of olive oil
1 cup (scraped) of chopped garlic
2 teaspoons of oregano
1/2 teaspoon of crushed red pepper flakes

Cook the whole peppers in boiling water until their skin starts to come off
Drain them and rinse under cold running water
Cut them in half, remove seeds and skin, and chop into pieces
Chop further into small pieces and reserve
Heat 4 tablespoons of olive oil and add the pepper
Simmer until tender
Let cool
Blend peppers, garlic, and any remaining oil in a blender or food processor
Add oregano, crushed red pepper flakes, and blend until well combined
