Mix all the ingredients and, using your palms, rub them together to form a coarse granular mixture
Heat it over low heat in a skillet
Place a ring mold with an 8 cm diameter on top of the skillet
Add 2 tablespoons of the mixture into the ring mold, pressing it slightly, let it sit for 1 minute and then remove the ring mold
With the heat of the skillet, the mixture will come together to form a thick pancake
Lower the heat and flip it
Let it cook for a little longer in the skillet
Serve as is or, if desired, drizzle with coconut milk sauce
Yield: 50 servings
This dish is known as tapioca in CearΓ‘, but it's also famous in Bahia under the name beiju.
