4 cups of spinach leaves
1 cup of chicken broth
1 cup of milk
3 tablespoons of flour
2 tablespoons of olive oil
2 tablespoons of butter
120g of uncooked ham
20 sardines (1kg)
2 cloves of minced garlic
1 pinch of nutmeg
Salt and black pepper to taste
4 cups of spinach leaves

1 Clean the fish, removing the head and spine. Reserve
Wash the spinach, but don't drain it
Chop the leaves and place them in a pot with salt and pepper
Simmer over low heat for five minutes. Reserve
2 Heat some oil in a pan and sauté the garlic lightly
Add the spinach and cook for another minute or so. Reserve
3 To one part, melt the butter, add the flour, and cook while stirring for one minute
Gradually add the broth and milk, stirring always until thickened
Season with salt, pepper, and nutmeg
Mix in four tablespoons of this sauce with the sautéed spinach
4 Cut the ham into thin slices then into strips
Place a strip on each fish
Add one tablespoon of spinach
Moisten the bottom of a baking dish with a little sauce
Arrange the fish and pour the remaining sauce over it
Heat the oven to medium temperature and bake for 20 minutes.
