3 cups all-purpose flour (360 g)

1/2 cup cold unsalted butter, cut into small pieces (100 g)
1/2 cup milk (120 ml)

1 egg yolk
1 cup dark raisins, drained (160 g)
1 egg yolk whisked with 2 tablespoons water (for brushing)

Preheat the oven to 350°F (moderate heat)
Turn a 35 cm diameter baking dish upside down and grease the bottom
Set aside
In a bowl, combine the first five ingredients, add the butter, and with two knives, make cutting motions to obtain a coarse crumb
Add the milk, egg, yolk, raisins, and mix just enough to incorporate the ingredients
This dough will be sticky
With floured hands, shape the dough into a 23 cm diameter circle over the greased baking dish bottom
Leave an empty border
Let it rest for 15 minutes
Brush the dough with the egg yolk mixed with water and dust with sugar
Use a large knife to mark the dough as if cutting it into eight slices
Bake for 15 minutes or until golden brown
If desired, serve with your preferred ice cream
