2 cups zucchini, sliced
2 cups shiitake mushrooms, stems removed

20 sprigs of thyme, chopped

In a large skillet, heat the olive oil over high heat
Add the shiitake mushrooms and red bell pepper flakes and stir-fry for 1 minute, using a spatula
Remove from heat and set aside

Add the zucchini to the skillet and stir-fry for 2 minutes
Season with salt and black pepper to taste
Add the shiitake mushrooms back in and stir-fry again
Dust with thyme and serve.
