2 cups of zucchini sliced into strips

In a large skillet, heat the olive oil over high heat
Add the shiitake mushrooms and red pepper flakes and stir-fry for 1 minute, using a spatula
Remove and set aside
Add the zucchini to the skillet and stir-fry for 2 minutes
Season with salt and black pepper
Return the shiitake mixture and combine
Dust with thyme and serve
