In a medium saucepan with 3 cups of water (720ml), place a refrigerator-proof bowl with the chocolate pieces
Bring to low heat, stirring gently with a spatula, until the chocolate melts (about 10 minutes)
Remove from heat and let cool
While that cools, in a stand mixer, beat the heavy cream until it thickens
Add the grated orange zest and continue beating until stiff peaks form
Fold in the melted chocolate and orange liqueur, stirring carefully with a spatula
Transfer to four small serving dishes
Cover with plastic wrap and refrigerate for about 1 hour before serving
