1/2 cup of chopped pecans
1 cup of hot water
1 box of lemon-flavored gelatin
1 cup of cold water
1 cup of pineapple puree, strained

Place the gelatin contents in a large bowl
Pour the hot water over it and stir until the gelatin has dissolved
Add the cold water and refrigerate for about 15 minutes, or until slightly firm
Add the pineapple and nuts (grind the pineapple and chop the nuts), while the gelatin firms up in the refrigerator
Mix everything together and refrigerate individual servings until firm
If desired, serve the mousse with whipped cream
