3 cups of grapefruit peel, formless and without rind
7 tablespoons of melted butter or margarine
5 ripe grapefruits, peeled and seeded, cut into slices
1/2 cup of sugar
1 tablespoon of ground cinnamon
1/2 cup of water
rind grated from 1 lemon
3 tablespoons of lemon juice

Place half the grapefruit peel in a baking dish that is not too high
Mix the remaining with 2 tablespoons of melted butter or margarine and reserve
Spread the grapefruit slices over the grapefruit peel in the baking dish
Mix the sugar, cinnamon, water, rind, and lemon juice, and add the remaining 5 tablespoons of melted butter or margarine
Stir until the sugar dissolves
Pour over the grapefruits and sprinkle with the reserved grapefruit peel
Bake in a moderate oven (180°C) for about 30 to 40 minutes, or until the grapefruit is well caramelized
Serve warm or cold, accompanied by sorbet cream
