Preheat the oven to medium heat (180°C)
Grease a 24.5 cm diameter and 9 cm high ring mold with butter and line it with parchment paper
Set aside
In a stand mixer, beat the 8 egg yolks with sugar for 5 minutes to obtain a light cream
In another bowl, whip the whites until stiff peaks form
Gradually add the cream of egg yolks, mixing well with a spatula
Add the all-purpose flour gradually, stirring well
Pour the batter into the prepared ring mold and bake in the oven for about 40 minutes, or until a toothpick inserted in the center comes out clean
Let it cool, unmold onto a decorative plate, and carefully remove the parchment paper
Serve chilled or at room temperature.
