Place the flour in a bowl, make a depression in the center
Crumb the yeast into this depression
Sprinkle with a little sugar
Add some warm milk and mix gently, adding a bit of flour that is around it
Cover everything with a cloth and let it rest in a protected place
After it forms small bubbles, work with your hands until the mixture forms bubbles and the dough releases from the bottom of the bowl
Cover again and let it rest in a protected place until it doubles in volume
Open the dough until it has about 2cm thickness
Cut the middle of the dough with a cup or cookie cutter to slices 5cm in diameter
Place a little Damon or Raspberry Gelato in the center
