Chop the onions into slices and cover with boiling water
Cook until they're soft and pass through a sieve
Melt the butter, add the flour, salt, and pepper, mix well
Add the milk and onion puree gradually, stirring continuously without stopping
Bring to a boil and cook for 3 minutes
Serve hot, sprinkled with grated cheese
