1 1/2 cups finely chopped onion
4 tablespoons butter or margarine
3 tablespoons all-purpose flour
salt and white pepper to taste
1/2 teaspoon sweet paprika
5 cups chicken broth
2 cups grated cheddar cheese
1/2 teaspoon Worcestershire sauce
a few drops of hot sauce
3 tablespoons chopped fresh parsley
heavy cream, whipped
chopped green onion

Sauté the onion in butter or margarine with a lid covered until it's soft (about 15 minutes), stirring occasionally
Gradually add the flour and seasonings
Cook while constantly stirring for 1 minute
Gradually add the broth and cook until creamy
Add the cheese and stir until melted
Add the Worcestershire sauce, hot sauce, and parsley
Check the seasoning and blend in a blender
Garnish with whipped cream and chopped green onion
Serves 6.
