1 large avocado - 1,350g
2 cups of chicken broth - 480ml
2 tablespoons of lime juice - 30ml
2 tablespoons of green onion
1 teaspoon of salt
To garnish:
1 large tomato, seeded and diced - 170g
1/2 cucumber, seeded and diced - 130g
1 teaspoon of chopped cilantro
1/2 teaspoon of lime juice
Salt to taste
1/4 cup of heavy cream - 60g - mixed with 1 tablespoon of lime juice - 15ml

Peel the avocado and cut it into pieces
Place the avocado in a blender or food processor and blend until smooth
Add the chicken broth, lime juice, green onion, and salt
Blend until creamy
Taste and adjust seasoning as needed
Refrigerate for 4 hours
To garnish, mix together the tomato, cucumber, cilantro, lime juice, and salt
Place a small amount of the tomato, cucumber, and cream on top of the avocado soup
Serve 6 portions.
