Sauté the onion and four alfalfa crowns in butter over low heat for 8 minutes or until the onion starts to caramelize

Add the wheat flour and stir for 1 minute
Add the milk and mix well
Remove from heat, blend in a blender, and return to the pan

Add the lime zest, reheat, and serve in four deep plates
Cut the remaining crowns into eight strips and distribute them among the plates.
