8 thin slices of tofu
4 small ciabatta rolls (65g each)
1 medium onion, finely chopped
1 tablespoon olive oil
2 tablespoons shiitake mushrooms, sliced
1 tablespoon soy sauce (shoyu)
4 tablespoons orange juice
Optional: salsa, green onions, and salt to taste
8 thin slices of tofu

Dry the tofu between two paper towels for an hour
Pan-fry the tofu in a non-stick pan until lightly browned
Cut the rolls in half lengthwise
Bake in a preheated oven at medium temperature for 10 minutes or until lightly toasted
Remove from the oven and reserve
In a saucepan, sauté the onion in olive oil
Add salsa, green onions, shiitake mushrooms, soy sauce, and orange juice
Simmer over low heat for 10 minutes
Place the tofu on a roll, topped with the shiitake mixture
Cover with another roll half and serve.
