Place 1 cup of chicken or beef broth in a small saucepan and bring it to a simmer over medium heat
Add the semolina, season with salt and pepper, add the butter, and stir well
Reduce the heat and cook for about 5-6 minutes, until it forms a thick cream

Meanwhile, separate the egg yolks from the whites, add the yolks to the semolina mixture, and mix very well
Beat the whites in a snow-like consistency, add them to the semolina mixture, and stir well
About 10 minutes before serving, bring the remaining broth to a simmer over medium heat
Moisten a tablespoon with cold water, fill half of it with the semolina mixture, and drizzle into the boiling broth
Repeat with the remaining semolina mixture
When the balls are floating, they're ready
