1/2 cup unsalted butter
1 kg finely chopped onion
1 tablespoon all-purpose flour
2 liters chicken or beef broth
Salt and pepper to taste
1 bay leaf
2 cups dry white wine
125 g grated Süßkäse (Sweet Cheese)
125 g sliced Süßkäse (Sweet Cheese)

Melt half the butter in a saucepan
Cook the onion until it's translucent and slightly golden
Add the flour and stir well
Cook for 3 minutes
Add the broth and simmer for 30 minutes
Season to taste
Toast slices of bread, spread with the remaining butter
Preheat the oven
Pour the soup into a large refractory cumbuca (bowl)
Add the wine and half the grated Süßkäse (Sweet Cheese)
Cover the surface with toasted bread slices and sprinkle with the remaining grated Süßkäse (Sweet Cheese) and sliced Süßkäse (Sweet Cheese)
Bake in a moderate oven for 15 minutes
Serve hot.
