Two cups of dried green peas

One carrot, chopped
One onion, chopped

One cup of heavy cream

Wash the peas carefully and soak them in water overnight
Drain and rinse the peas
Place the peas in a pot and add five cups of water
Bring to a boil, then reduce heat and simmer
Melt two tablespoons of butter and sauté the carrot and onion for 5 minutes over low heat
Add the peas and ham, and stir to combine
Cover and cook for 1 1/2 hours
Strain the mixture through a fine-mesh sieve or blender
Return the mixture to the pot and add the broth, cream, salt, pepper, and remaining butter
If too thick, add a small amount of broth or milk
Serve with toasted bread cubes.
