Bring the beans and water to a boil in a pot and let it simmer for 2 minutes
Remove from heat and let it rest for 1 hour
Let it simmer again and cook slowly, covered, until the beans are tender
Cook the onion and garlic in the fat until the onion is lightly browned
Add the remaining ingredients, except salt and pepper, to the beans
Let it cook slowly, covered, for 1 and 1/2 hours
Season to taste
Serve with three liters of liquid
