3.5 liters of water
1.5 cups of white beans
75g of salted bacon, cut into cubes
350g of prosciutto, cut into cubes
3/4 cup of chopped onion
1 handful of spinach, washed and chopped
3 small potatoes, peeled and cut into cubes
350g of smoked linguiça (in a single piece)
salt and black pepper to taste
3.5 liters of water
1.5 cups of white beans
75g of salted bacon, cut into cubes

3/4 cup of chopped onion

3 small potatoes, peeled and cut into cubes
350g of smoked linguiça (in a single piece)

Let the beans soak for one day or, if desired, cook them on the same day as follows: place the water in a pot, bring it to a boil over high heat, and let it simmer
Add the beans and cook for 2 minutes
Remove from heat and let it rest for 1 hour
Pour off 2.5 liters of the liquid the beans were soaking in
Mix this liquid with the beans, salted bacon, prosciutto, onion, and pour into the pot
Bring to a boil over high heat and then reduce the flame
Simmer, covered, for 1.5 hours or until the beans are tender
Add the spinach, potatoes, and smoked linguiça
Simmer, covered, for an additional 30 minutes or until the potatoes are tender
Cut the linguiça into 2cm thick slices and add it back to the soup
Taste and adjust seasoning if necessary
Serve hot
