2 large cans of white beans, drained (500g each)
1 1/2 cups chicken broth
1/2 cup chopped green onion
70g (1/2 cup) diced prosciutto or cooked ham
black pepper to taste

In a blender or food processor, puree one of the cans of white beans with 3/4 cup chicken broth
Place the mixture in a medium saucepan, add the remaining white bean and chicken broth, green onion, and prosciutto
Leave to simmer
Let it come to a boil, then reduce heat and let cook slowly for 15 minutes
Season to taste with black pepper
Scoop into bowls and, if desired, sprinkle with chopped parsley
Serve four portions.
