Preheat the oven to moderate temperature (170°F)
In a small pan, combine the meat sauce and cooked rice, and simmer for 10 minutes. Reserve
In a large pot, bring the water to a boil
Cut off the tops of the pimientos, remove the white membranes and seeds
Place some pimientos in the pot at a time, simmer for 10 minutes
Drain
Stuff each pimiento with the meat sauce and heated rice mixture
Top with cheese, using about 1/2 tablespoon per pimiento, pressing gently
Arrange in a refractory baking dish
Bake in a moderate oven (170°F) for 10 to 15 minutes
Serve hot
