1 quart of white beans
12 quarts of water
1 quart of barley
1/4 quart of olive oil
2 tablespoons of butter
1 chopped onion
2 sprigs of parsley, chopped
2 carrots, chopped
1/2 quart of fresh parsley, chopped
125 grams of smoked ham
salt and black pepper to taste
1 quart of white beans

Soak the white beans overnight
Drain and place in a pot with water
Let it simmer
Lower heat well
Cover the barley with cold water and reserve
In another pot, heat the olive oil and butter
Sauté the onion, parsley, carrots, until lightly browned
Add the fresh parsley and stir well
Add to the white beans with smoked ham
Let it cook slowly for 2 hours
Season to taste with salt and black pepper
Remove some of the soup and strain through a sieve
Place in the pot
Drain the barley, add to the pot and let it simmer
Serve hot and cut the ham into small pieces
