1 liter of fat-free chicken broth
1 small onion, finely chopped
2 cloves of garlic, mashed
1 or 2 sprigs of parsley
1 or 2 stalks of green scallion
6 cups (chopped) of assorted vegetables cut into cubes (suggestions: broccoli, carrot, cauliflower, turnip, leek)
1 liter of fat-free chicken broth

In a pot, bring the chicken broth to a boil
Add the remaining ingredients and let it simmer again at high heat until boiling
Reduce the heat, cover the pot, and cook until the vegetables are tender
If desired, blend them in a liquidizer.
