Peel the yucca and cut it into pieces
Melt 1 tablespoon of butter or margarine in a pot and put it in the oven at medium heat
Add the onion, tomato, and green scallion and cook for 10 minutes
Add the hot chicken or beef broth, cover, and simmer until the yucca is tender
Blend everything in a blender
Season with salt and black pepper to taste
Simmer without covering until it thickens
Add the remaining butter or margarine and parsley and serve
Serves 4-6 people.
