In a large pan, heat the olive oil or butter over high heat for 5 minutes
Add the onion, garlic, tomatoes, and cumin
Add 6 cups of water and bring to a boil
Add the bread slices and let it simmer
Crack an egg into the pan and stir gently
Continue cooking over low heat until the eggs are cooked through
Remove from heat, stir gently, and season with salt and pepper to taste
Serve hot, garnished with chopped fresh herbs if desired
