In a large ceramic pot, combine the onion, garlic, olive oil, and tomatoes
Bring to a boil at high heat for 4 minutes
Add the peas, coriander, and 4 cups of water
Simmer for 10 minutes at high heat, stirring occasionally to break down the peas
Season and serve with grated Parmesan cheese
