Bones and broken pieces of the turkey's carcass
2 1/2 cups of turkey's stuffing
2 cups of turkey's gravy
3 large beets cut into thick slices
3 stalks of fresh parsley, chopped
1 medium onion, chopped
1/2 cup of fresh thyme leaves
1 bay leaf
2 tablespoons of salt to taste

Separate the turkey meat from the bones and tie them up with a fine cloth
Place the meat, bones, and remaining ingredients in a large pot and bring it to a boil over high heat
Reduce the heat and simmer for 1 hour
Stir occasionally to dissolve the stuffing
Adjust the salt and remove the bones from the pot.
