2 tablespoons of butter

4 tablespoons of all-purpose flour
1 cup of milk
1 liter of vegetable broth
1 cup of grated cheese (Muenster or cheddar)
Salt and black pepper to taste
Well chopped fresh parsley to taste

In a large pot, melt the butter
Sauté the onion, carrot, and green pepper
Dissolve the flour in milk, add to the sautéed mixture and stir
Add the vegetable broth gradually, stirring constantly
Add the grated cheese, season with salt and black pepper
Simmer over low heat until the cheese is fully melted
Serve in bowls, garnish with parsley and croutons.
