1/2 cup of finely chopped onion
1/4 cup of butter or margarine
1/2 cup of all-purpose flour
4 cups of milk
4 cups of chicken broth
1/2 cup of grated carrot
1/2 cup of well-chopped fresh parsley
to taste: salt and pepper
1 cup of melted cheese, cut into small cubes
1/2 cup of finely chopped onion

Cook the onion in butter until it's softened but not browned
Add the flour
Stir well
Add the milk, broth, carrot, parsley, salt, and pepper
Stir to combine
Cook over medium heat, stirring occasionally, until the mixture thickens and bubbles
Reduce the heat, add the melted cheese, and stir until it melts
Cook slowly for 15 minutes
If desired, garnish with popcorn
Serve hot.
