1/2 cup grated carrot
2 tablespoons chopped onion
2 tablespoons butter or margarine
1/3 cup all-purpose flour
1 teaspoon salt
black pepper to taste
1 cup milk
4 cups chicken broth
2 cups Gouda or Italian cheese, grated
optional: toasted bread crumbs
1/2 cup grated carrot

4 cups chicken broth
2 cups Gouda or Italian cheese, grated
optional: toasted bread crumbs
Saute the carrot and onion in butter or margarine over low heat for 5 minutes
Add the flour, salt, and black pepper to taste; mix well
Gradually add the milk and chicken broth, stirring constantly
Cook, stirring until thickened
Add the cheese and stir until melted; do not let boil
Serve with toasted bread crumbs, if desired
