4 tablespoons of butter or margarine
1/2 cup of carrot cut into small pieces
1/2 cup of green pepper cut into small pieces
1/2 cup of chopped onion
1/2 cup of salted crackers, crushed
2 tablespoons of all-purpose flour
1 liter of chicken broth
1 cup of grated cheddar cheese
1 3/4 cups of shredded Parmesan cheese or melted cheese

Melt the butter or margarine in a saucepan over low heat
Add the carrot, green pepper, onion, and salted crackers
Cook until the vegetables are tender, without browning
Add the flour and cook, stirring constantly, for 1 minute
Then, add the chicken broth and cook, stirring constantly, until it thickens
Add the cheese and stir until melted
Blend in a blender, heat over low heat to warm up, and serve
Yield: 6-8 servings.
